Yesterday, when I came home from wherever I had been. . . [don't ask me to remember where that was, things have been busy around here]...
I found two windfall apples on my work table, put there by my neighbor.
Today while I was making myself some dinner rolls inspired by Violet Winslow…. yes, I AM working on the next chapter! I decided to do something with those two forlorn looking apples.
They had their share of scrapes and bumps.
I salvaged what I could.
Then I decided to wing it and make a little apple cake. The only thing I measured was 1/2 cup of flour. There was an egg, some honey, some butter, some salt and baking powder and half and half to make a cake batter. I put the apples on top with cinnamon and brown sugar.
I baked it in the toaster oven for 36 minutes exactly.

I'll let you know how it turned out.
I think I'm gonna need ice cream though.
I wonder if my neighbor has ice cream??
