Prepared For Anything
Thu Aug 27 2009

For the last three mornings, I have had a craving.

I suppressed this craving.

I tried to ignore it.

I got out my shredded wheat and tried to drown it in high fiber 'fullness'.

I distracted myself with playing Farm Town.

I had a few cashews.

It didn't work.

Today I gave in. I got out my double boiler and my cast iron skillet and set to.

A few times a year, there is only one food that will be sufficient for the morning. One food so basic, so simple, so earthy that it deserves a place at the table on special occasions.

(Special occasion? It's Thursday. It's the tired fanny end of August. It's not my birthday. It's not YOUR birthday, shoot it's not even any one of these dog's birthday. ... this HERD of dogs while I'm on the subject... what's so special about today?)

It's Johnny Cake day, that's what....

I can fix a lot of the world's problems with some corn meal and milk. Honey just turns it into a delight. Starthistle honey turns it into food of the gods.

I shall be smiling a smile today that only comes on the face of someone who has consumed such a meal first thing in the morning.

Don't mess with me.

I've had Johnny Cakes for breakfast.

Must be in GENE's . I took sisterlaw to lunch yesterday and just had to have my FIX golden Fried Cornmeal MUSH.
Just had a craven flung upon me. Bob Evens does it GOOD. I think Johnny cake are about the same.

I adore Jonny Cakes and haven't had them for a while. I think I might just make some for dinner with shredded chicken and a roasted tomatillo salsa.

I'm curious.....what do you need the double boiler for? I thought Johnny Cake was a simple cornbread type batter cooked as pancakes.

They look scrumptious by the way. :)

They look really comforting and yummy. I have never had them before. Some day we will have to share a batch of Johnny Cakes.
