This Much and No More

I have cooked myself to a standstill today.
Sundays have become cooking days for me these last few weeks. I just got into this habit . . . I don't know if it's a good thing or not.
Today I cooked up roasted vegetables for my lunches for the week. All tucked up in those ziplock containers. I made a large container of tuna salad for Hub Man's lunches. I baked a batch of peanut butter cookies (by request). I baked a chicken and took all the meat off the bones to use for various things this week. Then I cooked up a pot of lentil soup in my new pot from IKEA.
OMG, I love that store.
So I am SET for several days. I don't have to start from scratch for every meal. I have some goodies tucked away for any hot hot days that might show up.
"Like money in the bank." As a friend of mine used to say about food put by.
If all goes as planned, this Thursday, Hub Man and I will be going to a baseball game.
It's the local Stitch and Pitch event that some of the members of my knitting guild are going to. I plan to take LOTS of pictures. I LOVE baseball games. I WAIT and WAIT for the seventh inning stretch. If they didn't sing "Take Me Out To The Ballgame", I would ask for my money back!!!

In the winter I tend to cook things and put them up for later use like lasagna that I cut into individual servings and freeze. I do the same with Italian Beef, enchiladas, and a few other things. You're right. It makes life soooo much easier. We simply defrost, reheat and add sides.

I love Ikea, too! I just wish they would translate their product names. Putting a "forsbacka" mattress on a "malm" bed is just weird! I'm pretty sure I don't want a mattress that forces-back-a anytime soon. (And I don't even know how to put all the oomlas in!) My son pronounces the names like he's Chewbacca.

How about chicken spaghetti (baked, that is)? I was making it this morning at 9:30 for Rick's dinner tonight. I need to do more casseroles!
