Tomato Sauce

The tomato sauce is simmering for 2 hours. It might need another hour or two; I just cracked the pot, so I'm hoping enough of the moisture will evaporate after a couple hours, if not, I might be cooking until 8pm. I only put fresh garlic and basil in it. No salt. I will do that once I'm making something with it.
I sliced the garlic rather than chopping it, like they do in The Godfather. 😆 Idk if it makes a difference. I just looked it up, and it seems like sliced gives a smoother, more subtle flavor. Maybe that's a good thing. I'll have to try it out. Always Double The Garlic! 😁

I added the salt to my taste, and the sauce turned out delicious, so I'm satisfied with it. I made enough tomato sauce for 2-10oz jars. Im going to make eggplant parmesan with one of them tomorrow, and save the other for a later meal. It's not legitimately canned, so I might have to use it up within a week.

I made my eggplant parmesan and it turned out absolutely delicious!!
