Frozen Yogurt
May 16th:
I blended up some frozen yogurt; used plain yogurt, and mixed in some honey, unsweetened cocoa powder, and vanilla. I have it sitting in the freezer for a few hours before I can have some.
I'm enjoying this new diet I am on. I feel really good, and have energy. I had some cheesy eggs and potatoes this morning, cooked up some bacon and crumbled it in there too, added a bit of Sriracha sauce on top to flavor it more. My neighbor was passing my apartment to go to work and he complimented me on the smell of my breakfast. I had the windows open.
I might try to make up some tomato sauce from roma tomatoes.

I'm at work waiting to clock in, so I'd better try to post this...
For breakfast, I'm going to have black coffee and two hard-boiled eggs. For lunch, I packed albacore tuna that I seasoned with lemon pepper. I also brought snacks: pistachios, a cheese stick and 2 dates and 2 figs. I'm hoping all that will be enough to keep me satisfied. If not, oh well, I'll fast until dinner. After work, I'm going to start boiling my roma tomatoes to get the skins off, and make my tomato sauce. I'm excited for that because I have fresh basil and fresh garlic to flavor it with. I'm gonna simmer it for 2 hours, at least. I know I could just cook it for 30 min and it'd be done, but I enjoy the longer process. It really brings out the flavors. I might put a bit of honey or maple syrup to cut down on the acid. I haven't decided yet. I have no processed white sugar. I could maybe use date paste actually. I might whip some up in the blender with some water. I'd have to do some research whether it works or not. I really just want to use alternative sugar sources that are whole.
Oh, speaking of honey, there's a honey box that is kinda on the honor-system, so I might drive by there and grab some locally-made honey. I love that! It might cost $12-15, but it's enough to last a while, and it's farm fresh. I want to get more into that type of lifestyle, buying more local farms, and get away from the big business industry. I talked to my dad about it because of how expensive beef is going, it might be best to just buy from farms since it's almost just as much as the grocery stores, at $7/lb. I looked up one beef farm's prices and they come out to about $12/lb, but it's good quality, grass-fed beef, and they usually butcher the cow themselves, and don't mesh a bunch of cows together to make their hamburgers. It's all from one healthy cow, one resource. I like that. It might be worth the $12/lb. Also, if it's just me, I won't need anymore than like 20lbs probably. It comes to about $250 for 20lbs of different cuts. I'm sure certain cuts would run more than others so if I think of it that way, it's a decent deal, especially with the quality. The beef is from another state. I rather look into closer beef sources, but idk if they have bundles, or if it's all individual cuts you gotta pay for. That's why Im considering this one farm from Nebraska's beef. They have a "gift" beef box that's $250 for like 20lbs of different cuts of beef. And it's a familiy run farm, even the children get in on it, collecting the beef for the boxes. Idk, I've got to look into one beef farm my SIL recommended. The whole 1/4 of a cow is too expensive, even if you go in on it with other people. You get probably 50lbs of beef though(i forget the amount a 1/4 of a cow is), but it depends on how many you're buying for, and people usually have multiple options for meat, like chicken, so the beef doesn't get used up as quickly. That's why I'm considering getting the 20lbs from this one Nebraska farm. Anyway, I'd just have to sit down and do the math. Maybe 20lbs of beef is cheaper here, and I just need to look around locally.
Anyway, I've been eating better the past couple days, and I already feel great! I have so much energy! I'm wide awake when I get up in the morning and feel happy. I swear, if most people would change their diets, there wouldn't be so many depressed and mentally ill people. I really think that's what, especially America's problem is. We rely on pills rather than real whole foods. There's something wrong there. I know that if I eat terrible, I feel terrible. I'm just finally trying to do something about it, and it's amazing how it only takes a couple days to feel better. I don't feel as bloated and the brain fog has gone away.
And if I do go out and eat, I am mindful of what I eat. Yesterday, my dad and the dogs went for a walk, and afterwards, we had mexican food. Well, I ate only a couple chicken tacos, and a sparkling water. There may have been some oil on the taco shell, but they weren't greasy, and it was better quality food than say, TacoBell. It's a restaurant, rather than a fastfood place. The quality of ingredients help too. But yeah, that's all I needed until the evening and then I ate a bit of my frozen yogurt I made, and I made a half a grilled cheese sandwich, grilled in a bit of butter for dinner. The bread was Dave's bread, so that's good quality, and I didn't overindulge with the bread. At some point, I want to make my own barley and wheat bread so I don't have to buy bread anymore, just the flour, which shouldnt be very expensive. I try not to eat much bread anyway. I'm trying to think of it as more of a side food than the meal.
I'm really hoping with this new diet, my body will begin to feel better and change without much effort, especially as I use the energy I gain from it from day to day. It's put me into a completely different mindset. I'm praying to God I don't fall back to bad foods from this diet. I feel too good to go back. I just need to find new recipes, and new ways of cooking and preparing meals. Right now, it's new and fresh, so I'm all gun-ho about it, but what about, in a week? I want to keep eating good, and keep feeling good. I want to continue this new way of Life. I will have God on my side to guide me. 😊
Well, I'd better start work... I've got pools to do today.

Good for you, for taking charge of your food. And yes, eating well can effect much more than just our bodies!!!
