We had poached salmon tonight. It was... INCREDIBLE.

The best part? It was SO EASY to make it should be illegal. Since it was too good not to share, here you go:

Crock Pot Poached Salmon

4 salmon steaks
2 Tablespoons lemon juice
1 cup water
1/2 teaspoon salt
1/8 teaspoon white pepper
4 cloves garlic, minced
1 onion, chopped
2 Tablespoons butter
1/2 teaspoon dried dill weed

Grease the bottom of a 3-4 quart slow cooker and stack the salmon fillets in the appliance. In a heavy saucepan, combine remaining ingredients and bring to a boil over high heat. Stir, then pour over salmon in the crock pot. Cover, and cook on low for 3-1/2 hours or until salmon flakes when tested with a fork.

I served this with a freshly picked romaine lettuce with ceasar dressing.

I considered also serving it with freshly picked beets from the garden, but I had a bunch of those yesterday and I need to, um... wait a day or two before having more.

For anyone who doesn't know what happens when you eat a lot of beets, try it and see! It's something that should be experienced by everyone at least once in their lives! It's not painful or uncomfortable; just... interesting.

You'd think I would have remembered that from 20-some-odd years ago...

    Yes, isn't it interesting when you eat a lot of beets. Hmmm. Yeah.

    Your salmon recipe sounds ultra-delish. I'm going to try it, but not with *four* salmon steaks. Not just for me.

    I am going to try that. Not tonight though,,,I've already planned to try a new recipe for shrimp and cheesy grits.

    Salmon is such a perfect fish....

    Every time I cook it, I feel like I have gotten away with something....

    Here's my favorite way to cook it:

    Get a jar of Tomato Basil Alfredo sauce.
    I think Bertolli makes it.

    Cut up your salmon into serving portion sizes.

    Heat up the sauce in a skillet to just simmering put in the salmon. Cook it slowly in the sauce, turning once for about 15 min or so until it seems done.

    Serve with rice.

    I kid you not. That's it.

    that recipe sounds divine and I intend to try it next week. Now I have a weird obsession to find out what happens when you eat too many beets!

    I don't have a slow cooker, could I do the same thing in an ordinary pan on a low heat?

    A dutch oven????

    I do have some casserole dishes, one is stainless steel but the other is a proper pot one, I'm assuming thats nearer in description!

    Now you know why the cooking with cuty entries are sometimes quite true!
