OK, maybe not napalm, but at least pie.

For the second morning in a row I am up and running without going back to sleep.  Scarey.  I've got the first of two Sweet Potato Pies in the oven.  I need to get some other baking done, but after the pies are done I need to make a run to the store for the remaining food items for dinner tomorrow.  There are a half a dozen other things I need to get done, but I've forgotten what most of them are.

Oh!  I FINALLY found my checkbook!  Of all places, it was in the pocket of my bathrobe.  I can't remember wearing my bathrobe in ages, but apparently I was wearing it the morning I "lost" my checkbook.  If Shelby hadn't have gotten sick this morning, causing me to grab it rather than getting dressed quickly, I never would have found it.

I'm not sure if that makes up for having to clean the carpet though...


Sweet Potato Pie

I found this recipe online, and I can't wait to give it a try when it is done and ready!

Ye Olde Fashioned Sweet Potatoe Pie

3 large sweet potatoes, diced, boiled and drained
2 sticks unsalted butter
2 cups sugar
4 eggs, beaten
1 tsp whiskey
1 tsp vanilla
1/2 cup buttermilk
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp nutmeg

2 Nine inch unbaked pie shells

Mash sweet potato with butter and sugar while hot. Let cool slightly, blend in the rest of the ingredients. Cook at 350F for 45 - 60 minutes or until set.

It is just a bummer that it can't be tested shortly after coming out from the oven. Oh well, I haven't gotten any whip cream yet, so I can wait until then!



More Yummies

I came across this recipe, and boy does it sound good! I'm definitely going to have to give it a try!

Whiskey-Braised Applesauce

1 tablespoon unsalted butter
1 1/2 tablespoons chopped fresh ginger (about a 2-inch piece)
6 Granny Smith apples, peeled, cored and coarsely chopped
1 cup dark brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup bourbon
Optional: 1/4 pound of butter

In a saucepan, melt butter and saute ginger for 1 minute. Add apples, brown sugar, cinnamon, salt and bourbon. Simmer uncovered until apples are very tender, about 45 minutes.


Puree in a blender until "apple butter" consistency. To kick it up a notch: whisk in 1/4 pound of butter after pureeing applesauce.



Plans

I got a hold of Hubby and asked that he bring home some ice. I don't have room in the fridge for all the food for tomorrow, so I need a extension to the fridge. Enter some ice and the cooler. When Hubby and I were picking out the fridge we wanted, what looked like a nice big fridge and freezer turned out to not be as big on the inside that it seemed to be.

More and more I am envying the set up my Bro & SIL have. They have a huge fridge in the kitchen that is only a fridge, no freezer. Separately they have a large freezer for the things that need to get frozen.

Oh well, hind sight and all that. At least now know what I want for our next round of appliances!

I've got the pies made, I need to make the pudding dessert but have to wait until I can clear some room in the fridge. I'm trying to think of anything else I can make today, but everything that is left needs to be done tomorrow.

Our meal tomorrow will be very starchy in order to accomodate all the requests from the family. We will be having ham, cornbread stuffing, scalloped potatoes, mashed potatoes (regular and sweet potatoes mashed together), carrots, peas, green beans, cranberries, rolls, sweet potato pie and a heavenly layered pudding dish (graham cracker crust, vanilla pudding, chocolate pudding and whipped cream).

OK, now I'm REALLY hungry. I need to go find something to snack on, I think there is a chicken pot pie in the freezer...


Teeth Grinding Frustration

I have yet to receive my mid term from my teacher. I'm beginning to suspect that the test she was supposed to give us a few weeks ago, then last week, and finally this week, hasn't even been written yet.

It should be interesting. She told us that she is taking the test out of the homework questions, but she has only assigned a couple problems from one chapter of the 4 we have gone through. Of that assignment, she was unable to answer questions we had on how to answer some of the questions. I'm hoping that she makes this test a fact based test with good solid concrete answers that come directly from the book.

Is that too much to ask for?

Maybe.

If I don't get anything from her by Monday I will definitely be going to the administration with my complaints.

    There is no pumpkin pie in the universe as tasty as a sweet potato pie. My mouth is watering just reading about yours!

    well i gotta say it, the kiwi in me just can't imagine having a vegetable like the potato in any context other than roast dinners. i.e. roast potato. i'm sorry but mixing potato and sugar? simply doesn't compute, as much as i'm sure it tastes lovely its just like my brain can't accept it as a dessert. someday i'll have to try sweet potato pie, i really really love pumpkin pie and so its pretty much the same concept

    not sure if you guys have straight roast pumpkin as a vegetable but thats a kiwi thing too, without any brown sugar or whatnot on the top

    i love mashed sweet potato in milk and sugar. i eat it like a child (without the bib. lol.)

    thanks for the tip about grilling turkey. maybe we'd try roasting one by christmas. not a common custom here. but we do roast a whole pig or a calf. hehe.

    Boy, that's not very many classes for math, I would be upset too.
