If I Knew Then, What I Know Now
Sun Oct 09 2011

I would have gotten a gas stove instead of my ceramic top electric.

I was unaware of the things I couldn't do with it when I saw the ease of cleaning the top. The idea of no more cleaning burners, and replacing the burner pans on a fairly regular basis over rode the need to look into the limitations of a ceramic top.

The canning limitations were what I really needed to know about. I know them now, and have found a temporary work-around, but it's very unsatisfying.

So, for my next house, I will do everything I can to make sure I have a gas stove.

I don't think I could go back to electric. I adore my closed burner gas stove.

Wait, what's the problem? I can on mine all the time (water bath, I don't have a pressure canner yet.)

I have no idea if mine has a weight limit. But, I have an idea, you could use one of those turkey fryers. They sit outside with a propane tank, massive burner, it'd fit any pot. I was thinking about getting one so I could can outside to keep the heat out of the house. Hmm, maybe I will do it sooner so I don't bust a stove....
