This is AMAZING, I think I need to make these part of my future holiday dinner items.

--In a LARGE skillet (I have a gianormous electric frying pan I use), brown a pound of bacon that has been cut to small pieces before frying. With a slotted spoon, remove the bacon pieces. Do NOT drain the fat.

--In the fat, sautee one large chopped onion until it is soft. Drain most, but not all, of the bacon grease at this point.

--Add 2 pounds of fresh green beans, cut up. Sautee briefly, re-add bacon pieces to the pan.

--Add ½ cup water and 1.5 tablespoons white vinegar. Optional: Add 1 tablespoon red pepper flakes.

--Cover the frying pan and steam the beans until done.

Wow. That’s all I have to say. Wow.

    I might make that for P sometime, he loves bacon...

    I don't think it would work with veggie bacon as that doesn't have fat in it...

    Yummmm..... forget it as a side; I could make that a whole meal. :)
