I came across this recipe in one of my Southern cook books. While I think it sounds wonderful, I highly suspect my family would look upon it with suspicion just prior to turning up their noses at it.

Peanut Soup

¼ cup butter
1 cup thinly sliced celery
1 medium onion, chopped fine
1 Tbsp flour
2 quarts chicken stock
1 cup creamy peanut butter
1 cup light cream

1. Melt butter in large saucepan over low heat and add celery and onion. Cook until tender but not browned. Add flour and stir until mix is smooth.

2. Gradually add chicken broth and bring to a boil. Blend in peanut butter and simmer 15 minutes.

3. Stir in cream just before serving.

Makes 8 servings.
