About a week ago, I was watching Rachael Ray, and the meal she made stuck in my mind. I HAD to have this meal.
The meal was Chutney and Cheddar Stuffed Chicken Breasts with Smashed BLTPs.
It was... AMAZING.
I did discover that I need to get something to drizzle olive oil with. My method of drizzling... not so much of a drizzle of olive oil as a cascade of olive oil, but it was still good!
I also discovered that my frying pan that I thought was large was not as large as I thought it was. Next time I need to remember to use both electric skillets and forego my stove-top frying pan.
I also need to remember to have something else for the kids to eat when I make it again. This definitely falls under the "grown up food" category, and is not appreciated by children who consider corn dogs to be gourmet food.
