Beet It!

I pulled all the beets in the garden today, and I'm in the process of getting them ready to be pickled.

Oh, go ahead and turn your nose up at it, I love pickled beets on a salad! Yummy!

I just need to wait for them to cool down enough for me to trim and peel them before slicing and getting them pickled and canned. As it is almost 4:30, and we will be going to the Y tonight after Hubby gets home (any minute now) I suspect the actually pickling part won't happen until tomorrow.

That's OK, maybe I can get done with the kids appointments early enough in the morning that I can do that before it gets too hot during the day.

I can hope can't I?

    I have a grundle load of peppers ready and one pink tomato.. I love my little garden.. My basil and parsley has gone crazy.. took over a big space.. It is so pretty
    Enjoy your beets.. I use beets when I use my juicer. It is sooooo healthy.. tastes a bit much, but if you add it with carrots or an apple it is better

    brat camp is on tonight! and my brat has to work.. and he came home with 4 minutes to get there. not time to shave.no time to wash up~
    I am so mad at him.. just like he can come in and no one has a life but him. I think next work day I'll be gone when he comes in.. and then he'll have to figure his own way to work.. I hate rush hour..BUt had to go to post office and send a book off.. anyway.. so .. i did give him a ride.. no wonder he pulls this crap.. I never say no

    I LOVE pickled beets. Only one in the family who does. I like them with thin slices of mild red onion.

    I haven't watched Brat Camp, but I can figure out what it's about from your description. I can't imagine what it would be like to be afraid of your own child. But so thankful that he's past that.

    My granddaughter was diagnosed ADHD and was on Ritalin for awhile. Then 2-3 years later she was diagnosed ADD and was on Strattera for a few months. Now she's on nothing, and seems to be handling herself pretty well. The attention deficit seems to set in when she's not interested in what she's supposed to be doing. Curious, ain't it?
