I ended up running out of sugar while doing the apricot butter (the sack of what I thought was sugar in the pantry turned out to be flour), so the jam will have to wait until tomorrow.
It will give me something to do while the kids are in school at least!
The place I purchased the apricots and asparagus will be having beets and beans on sale next week according to the man I spoke with. While I'm growing my own beats for pickling, I wouldn't mind buying enough to try out a couple different recipes to see which I like the best. I also passed a place on the way home from the airport this morning that has strawberries on sale this week at a good price. Maybe I will go pick some up after I'm done with the apricots.
