Plum Butter for InStitches

I made this yesterday, and it is GOOD!!

Spiced Plum Butter

4 pounds plums (I prefer the darker plums)
4 cups sugar
1 tsp mace
Fruit Fresh (optional)

Remove pit from plums, place in large pot and add Fruit Fresh as indicated if desired. Place on medium heat and stew until soft. Place plums with skins in blender and liquify. Place back onto medium heat and add sugar and mace. Stir continuously until it comes to a boil. Reduce heat and continue to stir frequently until mixture is very thick (about 2 hours).

Process in water bath canner for 10 minutes.

Great on toast or Eggo waffles, FANTASTIC if still warm and served over vanilla ice cream.

    Thanks Alli. Did you by chance measure your plum puree before you added the sugar?

    I ask, because sometimes I cook large batches of fruit down and then come back later and measure out what I need for a recipe. This can be very helpful when you have lots to deal with.

    Oy, I'd hate to get kids off to school that early. Let me rephrase that. I'd hate to get up that early.

    High School gets out earlier in the day so kids can have part time jobs when they are in high school.
