The Master of Disguise

Don't bother looking for Dana Carvey, in my house the master of disguise is zucchini.

For dinner tonight was a huge bowl of spaghetti. The zucchini cleverly hidden through the puree process on my food processor. One serving for the meal was probably equal to 4 servings of veggies (between the tomatoes, onions, peppers & zuke's). For dessert? Chocolate cake, also packed to the max with zucchini & squash. The family can check off the Vitamin A block for their daily nutrition requirements.

The cake was amazingly good. For anyone looking to disguise zucchini, here is the recipe:

Chocolate Zucchini Cake

2 1/2 cups flour
1/2 cup cocoa (my neighbor says 1 package of Devils Food Pudding works great too)
2 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 cups sugar
1 cup olive oil
3 eggs
2 cups grated zucchini and/or squash
1 tsp vanilla
1/2 cup milk
1 cup chopped walnuts or mini chocolate chips(optional)

Preheat oven to 350
Generously grease a 13 X 9 baking dish

Combine flour, cocoa, baking powder, baking soda, salt and cinnamon in one bowl
In a second large mixing bowl, combine sugar, oil, eggs, vanilla, and milk. Beat on low until combined. Slowly add dry ingredients until combined. Stir in zucchini and nuts/chips. DON'T OVER MIX!

Pour batter into greased baking dish. Bake for 1 hour or until toothpick comes out clean from center.

If you prefer loaf's, pour batter into two well greased 8.5 X 4.5 X 2.75 loaf pans and bake for 1 hour or until toothpick comes out clean.
