Easter with MIL

The trip to MIL's went well. We visited with Hubby's family for a while, then took Mom out for lunch. She has been craving a hamburger, fries and strawberry shake for a while, so we made that craving into a reality. I expected moving her to be more difficult since her accident and hip replacement a few months ago. It was not nearly as bad as I had anticipated. The only difficulty we ran into was when she got to laughing when we were trying to get her into the van.

The kids had a blast and loved getting to see their cousins. They said that this was the best Easter they could remember. Of course, they said that after drinking their milkshakes, and I think that may have had something to do with it! It was a nice day though. The visit was nice and the weather for the trip down and back was BEAUTIFUL! This is the warmest day we've had all year, downright balmy at 62F degrees (17C degrees for those in any country other than the US)!

Hubby just handed me some jelly beans. Yummy! I love the purple ones! Thank goodness that purple jelly beans are grape flavored and not eggplant flavored.

I suppose I'm not being fair to eggplant. I've never had it, so I don't know if I would like it or not. That does not stop me from thinking that eggplant flavored jelly beans sound gross. If anyone out there in the virtual realm has a good recipe for eggplant, please share it with me, I'd love to test drive those purple potassium packed beauties. At only 19 calories per 1/2 cooked cup, I would love to find a way to eat them!

Speaking of veggies... I've been continuing to plan and prepare for my garden. One think I've wanted to do, and think I finally have a place to do it in is compost. I would love not having to pay for all those nutrients to put back into the soil. Hubby's only request is that I do it in some kind of bin so it doesn't get out of control (he envisions my turning the whole back yard into a compost pile). I ran across this website with lots of good ideas. I particularly liked the composting ideas for dog by-products. I like the idea of having a place and purpose for all the landmines Indigo makes for us. This of course, will be used for the flower garden, not the veggies.

Hubby and I will finally have the chance to watch our tape of Survivor tonight. Of course, I have to have all my math homework done prior to that, so I guess I'd better stop hiding from it!
