Attention Canucks & Aussies

I know I could go out and find this on the web, but I'm being lazy today.

Regarding Canada and Australia, what is their relationship to Great Britain?

Perhaps for the best answer, the thoughts behind this should be expanded upon.

Australia gained it's independence in 1901 and Canada in 1867. Regarding the government, chief of state for both countries is the Queen.

I'm just curious as to how this all meshes together. I know when us Yanks gained our independence, all ties to the crown were severed. How is it that an independence can be considered when it appears to this ignorant Yank that you still fall under the crown?

One additional question regarding Canada, what is the story behind having two official languages? How is it that Quebec never adopted the English language?

As a side note here, I'm not trying to start any flame wars, just trying to get information to answer questions my kids have posed.
