So, I was working on finishing up the applesauce today. I got it all into the jars, and the first batch put into the canner. It seems that somehow a non-canning jar got into my batch. I discovered this when I heard a distinct POP and with an ever sickening feeling in my stomach, I looked into the canner. One of the full quart jars had gone to pieces in the canner. The other jars were good, and there was only 30 seconds on the clock. I took the good jars out, and put the three remaining jars on hold until I can get the canner cleaned out so I can process those.
I HATE it when that happens.
I brought all the boys into the kitchen after it happened, and again patiently explained to them why we DON’T save those jars.
A whole quart gone. This sauce is made with Jonagold apples, and BOY is it good. I’ll have to go buy another 20 pounds next weekend and do more. Maybe I’ll also pick up more pint jars and process the sauce in those. Kind of a “one-serving” deal.
I think I’ll go serve up some applesauce for myself now.
