Not too much going on right now other than school, work and life. I did get a thrill today when I saw that my local veggie market has asparagus for $1.99/lb. I totally don't have the time, but I'm still tempted to get a LOT and pickle it. I've been craving pickled asparagus for about a month now. I don't want to break down and buy some that has been already pickled as it's always a disappointment compared to what I make.
I've also got a huge batch of applesauce to can. I picked the apples last fall, but bagged them and put them in the freezer as I haven't had time to do any canning since before last term. My school work has been too intensive for anything since last October. I'm really looking forward to school being done so I can can the applesauce, hopefully asparagus will still be a decent price then, and if I'm lucky pears will be on sale by then so I can put some of those up.
I'm also down to my last jar of apricot jam (or it might be some of the preserves, I didn't look too closely at the jar). I'll have to remember to put more of that up next year so I don't run out in the future. Admittedly apricots are my favorite. I love the cherry, boysenberry, raspberry and strawberry preserves I put up, but apricots are my absolute favorite! One of these years I want to do pepper jelly, but that will be some time in the future.
I also want to put up pie filling next year. I intended to do that this year, but I ran out of time when I had the money, and money when I had the time.
Learning to knit is another thing I'm looking forward to doing once school is done. That and tackling all the crocheting projects I have lined up. I have three afghans that will be the first projects to tackle, and then I want to try my hand at this and a few other choice items I've been drooling over.
Boy am I looking forward to having all my evenings free again. Hopefully I haven't now jinxed myself with the possibility of only finding swing-shift jobs in the future!
