I’ve also got the cable guy coming by today to fix or replace our cable box. A couple days ago it starting going all flooey, and it finally gave up the ghost. All it does now is power cycle and try to look innocent.
Hubby may or may not be bringing home someone for dinner tonight. I won’t be here for the actual eating, I’ll just plan to put whatever in the oven when he calls to say he is on his way home. I will be at school studying. That is the only way I can actually get some quality studying and work done. If I’m at home, there are too many distractions (most of which are named Shelby) for me to be able to focus on my studies.
I am hoping my GI bill check comes in today’s mail so I can go sign up for classes for next term. I will be taking Linear Algebra and Technical Writing. I’ve been told by folks who have already taken the English class to expect LOTS of writing. They were telling me about it and got a little wild around their eyes when they got to the part about a 15 page informational paper. I don’t know if we will be allowed to choose our own subject, or if we are given a list of subjects to choose from. If I’m lucky it will be a Choose Your Own Topic and I can combine it with any canning projects I come across. I think I could probably manage 15 pages of how to put up your own food. I need to dig out my old English book on the different styles of writing papers. I suspect it will come in handy.
Harry Potter & the Goblet of Fire comes out on DVD today, and I’ve no doubt that the kids will start asking to go get it the minute they walk in the door! I think I can be persuaded to do that. Of course, if the cable guy has come and gone before the kids get home, I may just go out and get it so it is here when the kids get home. Yippie!
Every couple weeks, I have what I call an Omelet Preparation Day. It’s a little bit of a misnomer as my omelets tend to be more of a frittata, but that’s neither here nor there.
While it may sound interesting, it is rather mundane. I purchase green and red peppers (other colors if they are on sale or ripe in my garden), zucchini, onion, and mushrooms. I spend a good chunk of time chopping up all the veggies (except the mushrooms, I’m lazy and buy those pre-sliced) then mixing them together and portioning it out into small plastic containers. The containers then go into the freezer to be used whenever anyone in the family has a hankering for eggs. I try to keep cherry or grape tomatoes on hand, but those don’t get frozen with the other veggies.
I’m thinking about adding some other veggies for my next batch, maybe some spinach and/or eggplant (although no one in my family has ever had eggplant, so I’m not sure how well that will go over) and adding some herbs into the mix for good measure.
This method works well for us. When someone wants some they can either take out a container and let it thaw, or if they are impatient they can put the frozen veggie mix into the colander and run warm water over it to thaw it out quickly. This method does require the veggies getting stir fried first to dry them out a bit, but both ways result in a satisfying meal. Add a couple eggs to it and some shredded cheese and you have all the fixings for a quick and filling meal.
My Omelet Preparation Day shouldn’t have been until Saturday this week, but #2 has been on an egg kick so the veggies ran out early this time. Needless to say, the family is going to have to go without this for a couple days as I have no intention of focusing my time on that project until I’m through my finals. I think this time around I’ll have the twins help me with it so they have that to keep in mind for when they are out on their own; they both LOVE omelets and other egg dishes.
I suppose I can find the silver lining to this and say that it gives me the chance to purchase more small containers so I can put up more at one time and make it last longer between each preparation day.
