I've been enjoying all the different fruits I put up last summer on my morning toast, and it has had me thinking about the jams my mom used to make when I was a kid.

I didn't make any of my childhood favorites last summer, but instead focused on new and interesting sounding items based on what fruits were on sale at the times I did the canning. While I am enjoying the plum and nectarine preserves I made, I miss my mom's raspberry jam that she used to make. I have decided that among the other items I put up this summer, I definitely need to include that. That and a LOT more apricot butter. The kids went through all the jars of it I made in 4 days. They REALLY liked it. I’m considering putting it up by the quart next summer.

OK, maybe not by the quart, but nothing smaller than a pint at the very least.

In addition to the apricot butter, I also need to bump up the quantity of applesauce and dilly beans I make. Those are also items the kids went through at the speed of light.

I also want to do salsa. I wanted to last summer, but time got away from me and I didn’t get the chance.

There are so many things I want to put up, but I don’t know if I will have the time to or not again. I’ll keep my fingers crossed that whichever class I take next summer is a low homework intensive class.

Maybe I can get my art class this summer.

    Dilly beans??? hummm.. you'll have to explain that one.
    I'm with you on the salsa.. I grow tomatoes and chili peppers every year. This year I also want to do some garlic, onion, herbs.. But I have not started anything. don't even have seeds, soil. or peat pots yet..
    I just have the desire.. :P
