Busy Few Days

What a crazy couple of days, it seems like we have been on the go since Wednesday afternoon!

We drove down to SIL’s Thursday for dinner and to visit family. Picked up MIL on the way over and dropped her off on our way home. We were fortunate in that traveling on Thursday allowed us to escape the travel nightmares on the roads Wednesday.

Friday was errands-from-hell day. Again we were in the car almost all day long. We did take time out to go see our dirt and walk around the neighborhood in the morning. Current estimates have building possibly starting around the 15th of December, which barring any natural disasters or harsh weather puts our move date around the first week in March. I’m really hoping there is no harsh weather as Hubby will be gone the last half of March, and I’d really like him to be here for the move since we are doing it ourselves!

Today we had Fran & Dave over for lunch and a visit. It was a good visit and great to see them. We need to take a turn to go up to their place next. Hubby hasn’t seen it yet. After they took off we spent the rest of the day doing some shopping for MIL and getting Hubby packed for his trip tomorrow. I don’t envy him having to get through the airports tomorrow. The crowds will be ridiculous. I’m just hoping that traffic won’t be too bad on the roads. We will be leaving here early enough, and I’m hoping most people driving will sleep in.

We continue to plan for Christmas with my folks and Bro. The topic of discussion for today has been meals. While Mom indicated she and Dad have been watching what they eat, I’m sorry to inform them that Christmas Dinner will NOT be low carb or low calorie. I’m willing to work around the rest of the meals, but not Christmas. I enjoy the stuffing too much! Bro and I have also been craving Irish Sundaes, so for the evening we have those for dinner; I will also have salad available for the toppings to go on.

For anyone not familiar with what an Irish Sundae is, find the biggest baking potatoes you can find, and then bake them. When finished, open them up and put everything you can think of on the. My personal favorites are hamburger browned and mixed into cheddar cheese soup, and all the fixings you would normally find at a salad bar. The more you pile on, the better it is!

    Irish Sundae. So *that's* what it's called. I've eaten those for years (minus the meat)and called them gussied up baked potatoes. Glad to know the true name.

    Ohhh, that sounds sooo good right now! We just call those 'loaded' baked potatoes. But even still, our loaded baked potatoes sound a bit sorry compared to your Irish Sundaes! lol I know what you mean about everybody else's diets. Everybody is on their own on holidays because I am doing traditional, regardless of their diet whims that year. I can't have hardly any salt and I just have to work around it and adjust my diet the rest of the day. I figure eveybody else can do the same, it's only polite, yes? Anyway, have fun planning Christmas! river

    You knew I was going to ask what an Irish Sundae was, didn't you? ;o) Sounds yummy, I've done similar but added chicken instead of beef.
